fix: clean exit on Ctrl+C in muxplex service logs

subprocess.run with check=True raised CalledProcessError then
KeyboardInterrupt on Ctrl+C, printing an ugly traceback. Fix: remove
check=True, catch KeyboardInterrupt, exit silently.
